We hold the table for 15 minutes. After that it goes back to the floor.
This form is a demo — nothing is sent. In the real room, Sable confirms by email the same afternoon. Cancel by 17:00 the day before or we charge $25 a seat. Private dining is 72 hours and the $1,200 minimum.
Before you book
Closed Mondays. Last seating 20:30 midweek, 21:00 Friday and Saturday.
Dinner Tuesday to Thursday 17:00–21:00. Friday and Saturday 17:00–22:00. Sunday is brunch only, 10:00–14:00 — no dinner. Parties of 1 to 12. Nine or more usually sit in Salt; twelve is Private if the date is free.
Dock is the window. It runs behind on weekends even when the booking is on time — that is not a rumour. If you need to be seated at the minute you wrote down, take Salt, or take 17:00 in Dock.
Dietary notes reach the kitchen. Shellfish is on most of the card; the kohlrabi main can be plated without dairy. We do not rewrite the lobster roll.
Smart casual. No shorts at dinner. Children are fine at brunch and at 17:00; after 19:00 the room is quieter if they are not at the table.

- Bar ledge in Dock if a two-top no-shows. We do not take walk-in sixes on Friday.

If the date is full
Call the floor. Email does not bump a six-top off Dock.
Sable answers the line from 14:00 on service days. Same-day cancellations sometimes free a two-top; we will not guess over the form. Parties larger than twelve are a buyout conversation, not a reservation.
Sunday brunch books the same way. There is no dinner on Sunday. Monday the building is dark — prep, linen, and Callum on the Cape if he can get there.
